Production Process of Freeze-Dried Instant Coffee.
1. Roasting and Grinding
- Coffee is roasted with a temperature of 210 - 225 degrees Celsius, by an automatic hot air roaster (Hot air) with a roasting time of 18-20 minutes is the right time to have the most delicious quality, time cool quickly so that the coffee retains its state from release to storage. The coffee is ground by a mill that automatically controls the size and temperature during the grinding process, ensuring the product is uniform and sized to the required size for the extraction process to achieve the highest quality and efficiency.
2. Excerpt:
The raw material of the process of processing dried coffee is coffee powder. In the first stage, coffee is extracted by injecting hot water into the coffee powder. This stage is similar to the filter or machine process.
3. Concentration:
The coffee extract after extraction will have a brix of about 10%. The task of this concentration process is to remove most of the water, bringing the brix to about 50% (the viscous form).
4. Freezing:
The concentrated extract will be put into the freezing system. Normal freezing temperature is around -30 to -50 degrees Celsius. Extracts are usually frozen on IQF continuous conveyor system to ensure the best quality.
5. Creating freeze-dried coffee grains
After freezing, the product is passed through the granulation process from the ice crystal itself. Large icebergs of coffee will be put through a grinder, crushed and then created grains.
6. Sublimation drying
