Production Process of Freeze-Dried Instant Coffee.
1. Roasting and Grinding

2. Excerpt:

3. Concentration:
The coffee extract after extraction will have a brix of about 10%. The task of this concentration process is to remove most of the water, bringing the brix to about 50% (the viscous form).
4. Freezing:
The concentrated extract will be put into the freezing system. Normal freezing temperature is around -30 to -50 degrees Celsius. Extracts are usually frozen on IQF continuous conveyor system to ensure the best quality.
5. Creating freeze-dried coffee grains
After freezing, the product is passed through the granulation process from the ice crystal itself. Large icebergs of coffee will be put through a grinder, crushed and then created grains.
6. Sublimation drying
When the beans are formed, frozen coffee is kept at a deep negative temperature from -30 to -50 degrees Celsius, will be loaded and trays and put into the sublimation drying chamber.
